Its main interaction is a surprise demand rather than a conventional trade. It does not open a trading interface, and the mod does not provide an exchange or reward for giving it diamonds or emeralds.

Use the spawn egg on any suitable location in the world. The egg stacks to 64 and is available from the Creative inventory.
For command-based spawning, use the entity ID:

A seeker checks for the nearest living player within 24 blocks. If it decides to make a demand, it walks toward that player while looking at them.
It stops when it is close enough—within 3 blocks—to make its request. The message names one of two gem types:
The Masked Gem Seeker asks: Could you spare some diamonds?
or:
The Masked Gem Seeker asks: Could you spare some emeralds?
The requested gem is chosen randomly.
During an active approach, moving more than 32 blocks away causes the seeker to stop pursuing that request. It may resume trying to approach if it has not yet made its demand and you come within range again.
There is no crafting recipe for the Masked Gem Seeker or its spawn egg.
